The answer is simple -- butter. Lots and lots of butter. And not the 2% milkfat kind we get in the states!

Croissants are pasteries more than just bread, even though they're made from a dough and yeast and all that. Ken is right, a croissant has heaps of butter
in it, as well as the process of the layering.

I've eaten some really "eh" croissants in France.

My mother used to make 'real' croissants for Christmas morning. It was a ton of work, as she did the roll out the dough and spread the butter step
multiple times. They were certainly heavenly, though, and a true treat, since we only had them once a year.

The wife and I will take a stroll by our favorite boulangerie/patisserie once in awhile and grab a baguette, brioche (for French toast) and a couple of the
croissant jambon-mornay.

Yeah, the keys are butter and layering. In fact, I'm inclined to say that the layering is the more important of the two - mos of the "meh"
croissants I've had have been more like a croissant-shaped bread roll... Of course, it's a lot more work to make them properly.
Mind you, if you're willing to go to the effort of making them yourself, even better than a croissant is an aberdeen buttery. It's sort of like a croissant, but square and with half a pound of lard added.
