Posts: 4214 11-17-05 6:59 PM Legend in the making... Oh and quite modest	Trim the pointy parts off of the leaves. I usually end up trimming about 1/3 off each of the outer leaves (inner leaves do not need trimming). Take off the leaves at the very bottom, and make sure that the stem is cut short to the base. Put them in the pot- covered with water- with the leaves pointed downward (in other words, bottom side up). Boil for about 25-30 minutes (a little bit of lemon can be added to the water for some added flavoring).

Posts: 269 11-18-05 6:24 AM	I'm a lazy bum and not nearly the cook the others are. I don't bother trimming the leaves. I fill a pot about half full, put the choke in there bottom side down so that the first half or so (at least) of the choke is covered. And I boil it til I can get a fork in the bottom with little resistance. Did I mention I have like two small pots and no big ones? You can also use a pressure cooker, which works MUCH faster. But you have to remember where the little pressure deelybobber is when you're looking for it... BAD artichokes are the Flying Spaghetti Monster's way of telling me that winter is coming and I don't live in California anymore!

Posts: 1513 11-18-05 4:59 PM Professional Juicer	I had made a penne bake that had the jar artichokes in it and my daughter hated it. I tried to explain to her that fresh artchokes taste different so I went to pick some up at the store. It wasn't until I got home that I realized I had never made them before. The pot size was a problem, I couldn't cook them bottom side up, but more on their sides. They were still pretty tasty, thanks for the help.
