You do know that your average "top professional fighter in the world" isn't looking to eat healthily at minimum cost when it comes to diet, right? They are aiming for a specific target and are not worrying about whether it's (a) the healthiest option for them long term, or (b) uber cheap.
You can keep asserting that if you like -- it doesn't make it magically true.
First, my head instructor at the gym I work out at is the number 5 middleweight in the world. He has less money than I do. So he's obviously not hurting for cash, but that doesn't make him a Soccor player either. Second, you may adjust your overall diet to train for a fight, but many serious fighters eat healthy as possible year round.
And none of that invalidates the fact that lean meats, fresh veggies, fresh fruit, and some good non-dairy fats is the best way to eat. It's the way our ancestors ate before agricultural technology kicked in and most of our bodies haven't evolved to keep up with the changes in food technology.
Keep eating bleached rice and bread from bleached flour. Eat your own weight and potatoes and pasta everyday. It won't affect me.
